Gluten Free Flour Recipes
Below are some simple recipes that give you some choice of what to bake with gluten free flour.
Gluten Free Flatbreads
Gluten free flatbreads are versatile and delicious, perfect for wrapping up chicken gyros, kebab, falafel and hummus with a bit of salad, or even to make mini flatbread pizzas.
Ingredients:
- 260g Greek-style yoghurt
- 250g self-raising gluten free flour
- Pinch of salt
Method:
- Stir the yoghurt and then mix it with the flour in a bowl using a spatula. As it begins to form a dough, bring it together into a slightly sticky ball using your hands.
- Knead the ball of dough on a floured surface until it is all combined and no longer sticky. You can add extra flour or extra yoghurt if it is too sticky or too dry.
- Divide into four equal portions. Cut a large rectangle of baking paper, dust with flour and place a portion of dough on top. Use a rolling pin to roll it out to about 3mm thickness and an oval shape.
- Transfer the flatbread into a dry, large frying pan over high heat.
- Cook on one side for 2 minutes, flip to the other side and cook for 1 minute, pressing down with a spatula firmly.

Gluten Free Bread
An everyday staple, a gluten free bread is great for toast, sandwiches, and for dipping with soup. This recipe comes together with a few simple steps.
Ingredients:
- 420g gluten free flour
- 3 teaspoons xanthan gum
- 8g instant yeast
- 25g granulated sugar
- 12g salt
- 350ml warm milk
- 4 tablespoons unsalted, softened butter
- 1 teaspoon apple cider vinegar
- 50g egg whites
- Optional toasted sesame seeds
Methods:
- Grease or line a 9-inch x 5-inch loaf pan.
- Place the flour blend, xanthan gum, instant yeast, and sugar into a bowl and whisk together.
- Add salt and whisk again.
- Add the milk, butter, vinegar and egg whites, and mix together at a low speed.
- Speed up the whisking until the dough is thick, smooth and wet.
- Scrape into a prepared loaf pan using a wet spatula.
- Cover the dough with a lightly oiled plastic wrap and allow it to rise in a warm and draft-free place for 30-45 minutes.
- When the dough has risen to a size about 150% of its original state preheat the oven to 190C.
- Slash the loaf using a knife about ¼ inch deep, brush gently with melted butter and sprinkle the seeds if you are using them.
- Grease the inside of the pan and place on the middle rack of the oven.
- Bake for 45 minutes to an hour, or when the internal temperature of the bread reaches 96C.
- The outside will form a thick, brown crust and the loaf will sound hollow when you tap it.
- Remove from the oven and allow to cool for 10 minutes in the pan before transferring to a rack.
- Allow to cool for at least an hour before slicing.
